The Story of Uncle Michael’s Roasted Chicken

Years ago when Rose was still in Zamboanga City, she decided to open a restaurant. So she borrowed a roasted chicken recipe from her brother Jing, and a rotisserie oven. We rented a store front, and “Uncle Michael’s Roasted Chicken” was born (yes, I’m ‘Uncle Michael’). For our Thanksgiving Dinner this year, Rose recreated the recipe. She prepared a whole chicken with Avocado Oil, then a dry rub with Rosemary, garlic powder, pepper. She stuffed it with lemon grass, garlic cloves and chopped onions, and used bamboo skewers to hold everything in place. She roasted it in the convection oven at 350 for about 60 minutes, then flipped it over and roasted it for another 30 minutes. That restaurant in Zamboanga City was successful, and sustained Rose for several years until it was time for her to prepare to move to the USA
